Ordered mine on Oct 29 at $259 and left the order open since I wanted, but did not absolutely NEED, the XFX 5850.
I haven't gotten an e-mail yet, but the order status now says "We are preparing these items for shipment and this portion of your order cannot be canceled or changed."

Lots of folks like XFX due to their double lifetime warranty (you + a subsequent owner). I've used EVGA and MSI cards in the past with no problems at all.

I was initially going to go AMD on my most recent build (budget similar to yours), but after doing quite a lot of checking around, I ended up following the i5 750 route.
I haven't yet OC'ed my i5 yet (I haven't needed to), but it's nice to know that I can bump it up to 3.2 GHz w/o a voltage...
I followed enginurd's good advice about the CPU cooler and got the CM Hyper 212+. It cools the i5 750 nicely and is a bargain.

750W, 4x25A 12V rails. Excellent reviews. I picked up one for my i5 build figuring on the possibility of using CF 5850s in the future.
If you can find a 5850, go for it. I'm on the Amazon waiting list (at $259) and don't expect to see it anytime this year. I went with the MSI 4870 as a temporary measure.
