Well part of it comes down to the transition from Disney buying the franchise, new licensing deals (which EA owns Exclusive rights too likely outside of Disney them selves making the game)
So pretty much Every game has to be conceptualized, and produced from scratch and for the most part has to go through what ever process EA does when they make a game.
Battlefront is likely an exception, it is not a new game it is some new sounds, models, texures and some different game modes built around the foundation that DICE already had built for Battlefield. It has no narrative, character performance, story board, the only thing it has from the star wars lore is art assets none of the character personality elements are really there.
Making an actual story based Star Wars game is more time consuming than a multi player only shooter. There could quite possibly be a few in the works already they are just too early in the process to show. Not to mention Bioware had been pretty tied up in The Old Republic for quite awhile which pretty much meant that there would not be a KOTOR3 any time soon if ever.
So if you figure mid 2013 is around when EA got exclusive rights, 6 months of legal to deal with puts it around 2014 before ideas can start to be built out pitched to EA execs, then teams have to actually build out those ideas, with the exception of battlefront since it was such an easy concept, i would not expect much in the SW space for games until late 2016 to mid 2017 at the earliest. and IMO that is rushed, a game that bakes for 4 years that is going for that AAA mass effect style would likely be something not seen until 2018, that is assuming they got to work right away in 2014.
edit-
We know that Battlefront was the game DICE was working on,
Bioware has been working on The Old Republic, if they have other projects they have not announced them but they are likely tied up with mass effect not Star Wars.
Have they revealed the game Dead Space developer Visceral is working on? they were part of the EA exclusivity announcement. But never said what that game was.
So there were at least 3 games being worked on within EA, Battlefront, The Old Republic, and a mystery game by Visceral.
its been 2.5 years since that announcement so more studios could of been brought into the SW family since then.
