When an engineer build something, he would build it for the worst case scenario, of course within reason. I see Furmark as a reasonable stress testing to measure worst case scenario of cooling system and power supply.
No card will ever hit that kind of stress in a real world situation. Being able to tell that an Nvidia card fails at 90c and an AMD at 100c doesn't really help when both cards are rated to operate at different temperatures. I just don't feel like I learn anything from these kind of benchmark tests.
