I happen to have worked in the commercial airplane industry and airplanes do pretty much fly themselves now. The pilot is there to make sure everything is working correctly and interfere in the event of an emergency or some unexpected condition. Especially once the airplane is at cruise...
So I was using my MacBook Pro today and I noticed that the colors are not consistent along the bottom of the screen. So I make a white image and fullscreen it and this is what I see:

From what I've read multi-touch requires different hardware (it uses some Broadcom chip), and can not be done in software. Although I imagine there might be some software that can emulate some of it's capabilities.

Do you know of any video links that can have the kind of range that we need and are relatively cheap (<$700)? The only reason I wanted to use a datalink for the the video was that I was able to find a datalink that had the kind of range that we needed.

I guess whether or not it's "real-time" might not matter that much, as long as it's also sending the GPS coordinates along with the images, which it will be doing. But I'm pretty sure a satellite link would be prohibitively expensive, at least in our situation, I'm sure the military can afford...
Satellite would probably be quite expensive and could be rather slow due to the high latency. So radio waves would be the only feasible way that I could think of.
Somebody asked above how long it will need to run, the UAV will only need to fly 1 hour at a time, so 1 hour's worth of batteries should be feasible.

For starters you could try windows movie maker, since it comes with windows. But if you want to go more advanced there's Adobe Premiere, which is probably one of the best editors out there, and I believe you can get a 30 day trial or something from Adobe's site, so you could give that a shot...
