So I went ahead and purchased a displayport-DVI cable and am still having the same problem. Currently, I have one DP->DVI, one DVI and one HDMI plugged into the card, but it will only permit me to use two at a time. Are there some special drivers I need?

Using the drivers listed on their site, and haven't run into any problems yet.

A few questions:
Are you using a PS2 mouse connection or USB? Are you using a USB/PS2 converter?
Are you using drivers for your mouse? If not, get the latest.
It sounds like an issue with the connections on your mobo/mouse. Do you have some other keyboards/mice you could test?

Looks great to me. I suppose if your budget allows it, you could justify the 8800GTS as it should last a long while and is DX10 compliant. But if you're looking to save a buck and don't game much, you can drop it down to a 7900 or 7950.
