Run programs only from Virtual Machine running windows

I work in a small business that has over 10 workstations and we recently switched from PC to Mac. Are there any options in VMware Fusion or Parallels 9 that restrict users to running only Apps on their virtual machines and not their desktops? The goal is so that files don't get saved within Windows on the virtual machine side and instead force users to save files onto their local Mac or shared folders on the server. Thanks.
 
If you run windows apps, why did the office switch to Mac?
 
It always makes me roll my eyes when a company (not saying yours OP) switches to Macs and then installs VMware or Parallels so they can run Windows. I know of a decent size company that did this. Everyone got a brand new, expensive Mac and then installed Parallels so everyone could run Windows and some used XP instead of Windows 7 which was even better.
 
You can use shared folders in Workstation, and burn a lot of payroll to set it up so that files can only saved to those shared folders which essentially reside on the Mac file system.

Return the Macs, but PCs, be done with it. Jesus, how does shit like this even happen in real life?!
 
I'd love to keep PC's for systems that need to run Windows apps but we've moved to Macs. I did see this issue coming but now that we're here I'm reaching out to see if there are better ideas or workarounds. I'm sure a lot of companies who have all switched to Macs have faced this issue at one point or another. :) I'd love to hear more. Thanks.

Oh and we're definitely in the process of providing training and continued support to help ease this transition to Macs.
 
Honestly, as a consultant, I have seen this many times. The best solution is to switch back to PCs. Unfortunately companies waste a TON of money on doing the cool thing rather than doing the smart thing for their business.

What you are basically looking at having to do to accomplish your goal is to create a Windows domain to lock down the Windows VMs with proper GPOs that disallow users from saving locally and only in specified folders that link to the Mac host OS. This is going to be a gigantic PITA and a huge waste of time for the business.

Sorry if I sound a bit grumpy, but I have had to deal with this so many times and my patience is wearing thin with poor managerial decisions. I am also in the process of installing my Java this morning, I am sure I will feel better once that is done. ;)

Get rid of the vm's and setup a terminal/rds server, then let everyone use those to do the windows work.
That's the only way to centrally manage the windows stuff, unless you want to touch every user station
