My 2 cents.
At the risk of sounding conceited (and I am, I am) what a pro does is to apply the thermal material in whatever manner and mount the heatsink using whatever method. A pro then carefully dismounts the assembly and inspects the "footprint" of the thermal grease to see what happened and what the coverage looks like. If all is well, clean, reapply and mount using exactly the same method. If all is not well, adjust whatever and try it again. One could argue you should actually run the machine for an hour or so then check. I dont take it that far.
There are some exotic "one shot" application TIMs that this does not apply to.
