Except that the physics are different in BF3 than BF2. In BF2, the jets actually turned tighter with afterburners on. In BF3, the jets turn tighter at a slower speeds, but like real jets eventually the lack of speed affects the turning rate (how fast the nose changes directions) even though they are turning tighter. Its not perfect, but it is slightly more realistic. However, there are a dozen other things that are wrong with the flight models that one game got right and the other did not.
In the loading screen of BF3 it says they turn quicker with afterburner. I have not tested this myself. I don't find them fly to get inside, as their flight models are more of float models and turning around every 3 seconds is not my idea of fun.
Though yes, you can "stall" in BF3. Though essentially your aircraft turns into a brick with almost zero input from your control no matter what position it is in. Pushing the throttle all the way forward will eventually allow you to regain control.
