I think you have many things mixed up here.
The 16TB llimit is per LUN but from what you describe, you are not using LUN. You seem to use SMB share which is FlexVolume backed that has much larger limit, exact limit is model specific, get your storage guy to find out.

The main benefits of NVMe is extreme low latency and high queue depth. When you have multiple VMs running on it, performance is crazy comparing to SATA SSD.
ARC is adaptive, meaning hot data gets added to ARC and cold data gets removed dynamically. It never hurts to get more.
