Honestly, ram isn't that important with ZFS if speed is not a concern. My original server (until last week) was an Atom w/4gb ram and a 38tb pool. No issues with stability or performance as it only serves media files.
While your setup wouldn't be ideal, I'm sure it would be fine to play around...
Unless you saved the SHSH blobs for 6.1.2, you will not be able to update. In fact, trying to update will just put you into an endless update loop until you install the latest iOS6 release (which will cause you to lose your jailbreak).
So does anyone know how to lock this game to 1 monitor when running SLI Surround? Normally just setting the res to 1920x1200 works but the UI doesn't give me that option. And forcing it in the user.cfg makes the res drop to 1280x400 (or something similar).

Acronis would be the easiest, you can either install it or just have it burn you a bootable CD that will allow you to make a full backup to the location of your choosing.

I probably have the same mobo as you, currently running FreeNAS 8.2 with 6x3tb/4x2tb raidz2 setup and it's been great. Plenty fast for media streaming (45-60MB/s avg writes), quiet and stable. Very capable system.
If you have a 4S and it was on 5.1.1 and jb w/ saved SHSH's you can reinstall 5.1.1 whenever you want. Once you upgrade to 6, you're stuck there permanently no matter what you have saved.

Game looks great, FOV is wayyyyy too low to be usable in Surround. Anyone know how to up it? I'm currently limited to only one monitor in order for it to be playable.

Personally I would look at Isilon rather than build your own for a project of this size, too many things can go wrong when you try to do it entirely on your own.
Edit: Not to mention adding storage with Isilon is stupid simple, plug another node in and press 2 buttons. Takes less than 10 minutes.

An insurance company in Michigan owns the IP rights and apparently are demanding way more money that SS is worth to any dev or publisher who are willing to buy. Till that changes, no SS for anyone outside of the original boxed copies.
Borderlands 2 works great, so do the Assassins Creed games (at least all the ones after 1, never bothered trying with it).
I know people love to shit on Ubisoft, but every AC game has worked fantastically out of the box in surround which is not something I can say for most things I play.

Not always, in fact I've done over 10 personal RMA's with WD (bad sign?) and I've only once received a refurb drive. Did one two weeks ago for a 2tb GP and got a brand new drive manufactured on June 14th of this year.
