This isn't entirely true, your motherboard also must support VT-d along with the CPU as well. (source).
Most server boards do support VT-d but not all desktop motherboards.

I did end up downloading the Essentials .ISO and spinning up a quick test VM. I was able to connect one RDP connection without being kicked off the console, the second RDP connection knocked out console.
They are going to be using this mostly as a file server so...
I agree, for just 2-3 VM's - workstation would work just fine.
If you're wanting to go the "hardware" route then an Intel NUC will certainly work. I use them in my home lab (http://miketabor.com/vmware-esxi-5-home-lab-upgrade/) and they perform beautifully for my needs.
