Also, given that I'm in the IT field, joining an Active Directory domain is rather crucial for my needs. It's not really a debate for me. I'll always go with the "pro" version of Windows.

Alternatively, you could simply disable the drives in the BIOS / EFI firmware, then re-enable them after the OS installation is completed.
Do you have any disk encryption installed on your Windows XP drives? If so, you may need to disable that before you can access the data from Windows 7.
