You will get tearing whenever the framerate does not match the refresh rate regardless. Doesn't matter if you're using a 60, 144, 240, or 360 Hz monitor. Tearing will always be present without some form of synchronization between frame generation and video output.
Depends on the game and engine in my experience. Not all games will have pronounced tearing. I've noticed tearing in some SP games at 100 fps whereas I have none in others at the same framerate. In Apex Legends or Warzone I push 140+ constantly (on a 240Hz display) and never notice any tearing--if it happens it's not noticeable.
