Let me tell you though, as with most anything... The more you pay the better it is. These things are high quality knives.
They're sharp as hell, don't dull easily, and are high quality materials and well balanced. If you do alot of cooking, it's something you'd want to have.

I've had my cheapo "forever sharp" knives for years, and they're still cutting through things great. Use them all the time. No rust, no broken knives, always wash them in the dishwasher even though they last longer if you don't. They're still very sharp, and supposedly have a lifetime warranty. I payed like $20 for a whole set of like 7 or 8 knives. If they all broke into smithereens tomorrow, I could buy enough sets at that lifespan to last MY lifespan for MUCH less than just buying those four stupid fancy-looking knives they have on Woot right now. They sure do look nice and I bet they're awesome, but the markup must be awesome, too, and seriously, a better knife?? I love to cook, but that's not going to make me cook any better or any faster. I can spend all that money on INGREDIENTS!!.

$400 knives ... lol.

But at the same time, people probably look at me and say, "$300 SSD??? LOL!! WTF is an SSD?? And 80GB?? My IPOD is bigger than THAT!!!"

This is the stuff professionals use (and it's not even unheard of to spend $1,000 on ONE). You want the best- look what they use.

Just like your SSD example. People not in this profession don't understand it, but we do. Same thing with the knives.

Having used some of the higher end ones (And like I said, I own a set of moderately priced ones...), they're really superior to the WalMart stuff you can buy for cheap.

Let's put it in perspective. Say you are ordering fugu. Do you want your chef to be cutting that fish with a 20$ Ronco knife, or an expensive 200$ Japanese or Swedish knife?

you simply cant cut as accurately or even as smoothly with a 20 or even 50 dollar knife, compared to a real chefs knife. it could be the difference between you enjoying delicious pufferfish, and dying of poisoning :> im not saying i would pay for chefs knives, because the semi-expensive ones from target do just fine for my simplistic, inaccurately-cut cooking purposes. but theres a reason they cost more, and its not JUST price gouging!

meanwhile i am super pissed i was playing l4d and missed the BOC

Actually, we all get a laugh every time someone comes in to the ER thinking they ate bad pufferfish. I thought you were supposed to stop putting dangerous things in your mouth after you pass three years old?

All the aside, I'm not saying you shouldn't have a good knife, I'm just laughing at the $400 price tag. Anyway, I did a little more research, it's definitely "Monster Cable" quality, hilarious. But hey, a person's money is a person's own money.

On topic though, I could use a blender... hmmm...
 
Dyson is back up, I don't really care for mine though, the uprights with motorized heads work better on carpet when comparing this one to my parents.
 
Expensive knifes are a little bit of a scam. There is not that much additional cost to justify the ridiculous prices you can find. There is no perfect steel, its not like you spend more money you get better type of steel, and if you spend enough money you get the 'best' steel. There is no best. There are a bunch of high end steels all with different pros & cons, and its usually up to application as to which is 'best'. The trade off often made with expensive knives is, smaller sharpening angle requires a stronger steel, but at the cost of rust resistance. Thats why you can't put expensive knives in the dish washer, they'll rust. Or maybe you can find a steel that will give you the small sharpening angle and is resists rust but it wears poorly and you constantly have to sharpen it. You can't have it all, if there was a perfect steel everyone would be using it.

Expensive knifes are a little bit of a scam. There is not that much additional cost to justify the ridiculous prices you can find.

Seriously dude, spoken like someone that's never used higher end knives before. There is a big difference. Enough for most people to use in their home? No.
 
The knife debate in here reminds me of so many others on the internet. People who have no experience with something (high quality knives, in this case) are convinced they know more about it than the people who own, know, and use those things. High quality things tend to be better than low quality things, surprisingly enough. Things are not scams just because you can't tell or don't understand the difference. Simply knowing which end of the knife to hold doesn't give you the ability to judge its quality.

I cooked professionally for years. Knives in this price range and up have been common in every kitchen I've ever worked in. If they didn't make a difference, that wouldn't be the case. In addition to allowing you to cut food more quickly and precisely, good knives are much safer than cheap ones. Good knives maintain a clean, sharp edge and so require less force to get through the food. They're better balanced, so they allow much better control. The combination of less force and more control drastically decreases the chance of the blade ending up in a place you'd rather it not.

The difference between cheap knives and high quality ones is immediately obvious to any cook with even basic knife skills. It may not be obvious to someone who merely uses their knives to hack food into smaller pieces. If I'd ever shown up to a job on the first day with a $20 set of "forever sharp" knives I'd probably have been laughed out of the kitchen and fired on the spot. It would have been solid evidence that I did not know what I was doing.
 
Do you know what fugu is? One wrong cut or miscalculation and you could be sprawled dead on the floor.

Good types of steel keep a good edge and require less force to get through food. Theres only so many commonly used steels to choose from, you pick the best for the job. Unlikely is you want a kitchen knife made out of SV90 or something that is difficult to machine, as that would mean it would be too difficult to sharpen. So really you're left with steels that are not difficult to work with. Nothing difficult to mass produce. Talk about balance all you want, how hard would it be to copy a decent design and mass produce in China? What exactly are you paying for?

You'll have to take that up with the people that make them.

The higher quality stuff is more expensive. That's generally how it is with almost everything. WHY they can't mass produce it? I have no idea. All I know is the stuff that's mass produced is crap compared to the high end hand-made stuff.

what are you paying for on an expensive knife vs some cheapass mass produced in china knife? well, lead-free, cadmium-free knives would probably be a good start.....

seriously. do a bit of googling. if that doesn't make you think twice about looking into where your stuff that comes into contact with food, then nothing will.

me? anywhere but china. and even then i'm still researching before I buy.

This is what Alton Brown says(on his episodes of knives), who is the [H] of the culinary world. I pretty much hate the food channel and all the ppl on it, except Alton Brown, I actually learn from his stuff(and cook too).
