If the OS drive dies am I SOL in regards to my data that is on the storage drives?

I'm still using the original WHS, maybe it's time to switch to 2011.

Yep no server backup on the original WHS unless you use the add in for it. I don't think that works that well though. If the OS drive fails in WHS I believe you have to reload the whole OS drive with the disc again like I was saying.

Yep, just reload the OS.
Even if you didn't, all the info in storage is able to be read natively by any Windows OS.
To change into WHS 2011 you'll need to reload the new OS and all your data on a 64bit capable machine and the disks can't be read natively.
Those two changes along with the removal of drive extender, have made many of us less than willing to update.
