Are you looking to game in NVsurround / Eyefinity or are you looking to game on one monitor while having the other two as extra desktop space?

I would recommend 1 7970 or a 7950. If you do want to game you can play BF3 at medium - high, and its just a great card for the price. Whereas if you choose Nvidia you will be stuck purchasing 2 cards unless you get that 580 that supports 3.

If you say CUDA, that is only supported by NVidia cards.

The MDT cards do have some weird resolution limitation, it varies from 1080p down to 900p for some of the lower end cards.
Theres a 570 which should drop in price (hopefully) when the new nvidia cards come out (hopefully) next month. But is currently $379. This will do up to 4 1080p displays. Theres also a 560ti model, but I think that has a lower than 1080p screen limit.
A 7970 is waaay more than $300!

These are all great suggestions. With your budget, I would seriously look at the 560ti and forget NVSurround all together for right now. You can still use the other two monitors for extra desktop space and all the 2D work you could ever want.
For realistic performance in an Eyefinity/NVSurround solution you would need a larger budget for the video card.

6950 will be able to do 3 monitors easily. It will play a ton of games at highsettings on eyefinity, some top tier games at medium, and some extremely tough to render games at low ( but you can always switch to one monitor if you have issues in which case youll be able to play on high again)

Buy an Nvidia 590 or just buy a card to run 2 screens and a USB Video adaptor for the 3rd screens.
3 Screens is kind of a pain unless you use it for gaming - I think 2 is better for productivity.

one of your monitors must connect with active display port. check amds website to find a certified adapter. I don't use an adapter so I can't help you there.
odd number of screens is always better. this way one monitor is always dead center and reduces injury/ neck strain.
Tough to knock the 6950. I have a 6950 (flashed to 6970) and it drives my 4960x1600 desktop fairly well (with an active DP to DVI adapter for one of the 1200x1600 screens). I only use the center 2560x1600 display for gaming, and it does OK for that at medium to high settings depending on the game. Could be better...quite a bit better honestly, but for 1080p a 6950 would be great.
