What will I be running?

AW9D-Max
E7200
4x1GB DDR2
1xSATA HDD
1xSATA DVD-RW
2x120MM Fans
Cooler
HD3850 (cheapest on Newegg), WANT TO UPGRADE TO 2 LATER

Trying to keep this under $100, doable?

ALSO, motherboard requires an 8-pin.

The Corsair 550VX would be good enough for your system. It's $10 cheaper here:
Corsair 550VX 550W PSU - $89

With that said, for just $15 more, you can get a good quality 750W PSU:
Corsair 750TX 750W PSU - $105

Yes it is overkill for your system BUT it does get you the most bang for your buck. $15 more for an additional 19A on the +12V rail? That's an great deal right there.
