With my gaming PC approaching 2 1/2 years old, I am taking a second look at it and trying to see if there's anything I should look at upgrading:

Motherboard: MSI Z77A-GD65
Processor: Core i5 3570K
Video Cards: SLI'd GTX 670 2GB
Memory: 16GB Corsair Vengeance DDR3 1600

I also have a couple of SSD's that I recently upgraded to so I'm leaving those off the list.

I suppose my reasoning for wanting to get a little more performance out of the thing is I'm gaming more at 2560x1440 and it seems to be struggling. I am just not sure if there's one or two things that might be creating some sort of bottleneck here or if it's just a matter of the video cards not being up to par for the x1440 resolution having a 2GB limit which I see some of my games hitting.
 
You're right, you should have 3GB starting at 1440p. I suppose the 2x GTX 670 would be enough otherwise, since memory bandwidth and shaders look solid. You can also try OCing the i5 if you have not done so already, but I suspect it won't help much. Which games are you trying to play?

I think the two games that I've been playing the most that I noticed a drop in performance after switching to 1440p was in Battlefield 4 and Metro: Last Light. I also noticed a drop in Skyrim, probably due to the texture mods I'm assuming.

I've been looking at the GTX 780 as an upgrade option as it ups the VRAM a bit to 3GB.
 
That'll do it. I heard Skyrim's texture mods devour VRAM. You should probably consider a 4GB model for future proofing a little longer. 1440p is 1.6x the pixel count of 1080p which current games recommend 2GB for.
 
Yeah selling the 670's for a pair of 3+ GB cards might be the way to go at your resolution. More and more games these days seem to be using more and more VRAM. Other than that, seems like you've got a pretty stout system even at 2 years old.
 
What PSU do you have?
Have you tried overclocking your CPU?

Yes, I've ran some relatively moderate overclocks and noticed a slight difference here and there. I recently updated my bios so I haven't re-loaded my OC just yet.

My PSU is a Seasonic 850X 850W
 
Then yeah, just overclock your CPU, buy new video cards and you'll be set for a few more years.
