I pondered the GTX580, but seeing the 580 verses the 5970, I wonder if it would be best to get another 5870 when the price falls and just crossfire. But is a 850w power supply enough? I'm thinking no.
 
Price on 5870s is already in the toilet, they go for 200$ shipped easy on FS/T.

The 850W PSU will be enough, assuming its not some 20$ buget bradn crap thats a 300W in disguise.

What's the specs of the rest of your system?

Depending on your system specs, which 850W PSU you have and which GTX 580 card you're getting, that may be enough for GTX 580 SLI. Check here:

Several 850W PSUs were recommended for GTX 480 SLI. It was only if you're planning on overclocking those GTX 480 SLI cards that a few 1000W PSUs were recommended. The GTX 580 uses a little less power than the GTX 480 card so the above article still applies.
 
It's a Corsair TX850W. It's running a GA-X58-UD4P, i7 920 @3.2ghz, 3 sticks of ram, One SSD, two 10,000 rpm drives, two 7,200 rpm drives and a dvd burner.

Then you'll be fine with either GTX 580 SLI or HD 5870 Crossfire.
