I'm interested in the DigiDoc that's left

I noticed in the picture that one of the LCDs is darker/clearer than the other, is this adjustable? Also, does the LCD show the temperatures of the probes as it cycles through them? And can the backlight be set to be continuously on?
 
It was the angle of the camera. LCDs are like that depending on the view angle.

The temps are displayed as they cycle.

Yes, the backlight stays on.
