Is there really any benefit going to Sata3 from a Sata2 HDs? Not talking about SSDs, just regular mechanical HDs. I've read that mechanical HDs are limited by their mechanical anyway and would never reach the 600MB/s transfer not to mention the full 300MB/s on Sata2. So, that means it's a waste of money to go with Sata3, correct? Or did I understand it wrong?

Overall performance is very slightly faster with SATA 6.0 Gbps HDDs compared to SATA 3.0 Gbps HDDs of the exact same design. However, other factors such as the amount of cache in the drive(s) and cache performance will affect a drive's performance much, much more than just a boost in the interface bandwidth. In other words, don't spend extra for a given-capacity HDD just for its SATA 6.0 Gbps interface.

What parameters will improve by adding a SATA 6Gb/s interface that can't max a SATA 3Gb/s interface?

I haven't paid any attention to the SATA6 mechanical drives.
 
Check out some of the benchmarks of the SATA III Caviar Black 1TB (WD1002FAEX) compared to the SATA II Samsung Spinpoint F3 drives (HD502HJ and HD103SJ) -- for example, Xtreme Systems -- and you'll see that, in many cases, the Samsung drives can compete with, if not beat the "newer" Western Digital drives.

Right now, the newer SATA III technology plays a minor role in a mechanical hard drive's performance.

That's an apples to oranges comparision.
