Recommend Dell for office assistant use?

I need to get something cheap (pref around 500) for medium office use. I am hiring an assistant soon.. I see so many freakin options for processors, etc. I'd like a regular tower with 4GB of ram, capable of having lots of apps open (excel, several IE/firefox, skype, quickbooks, scanner software, etc). What do I need? The options are overwhelming..

I use my Studio XPS13 Core 2 duo on Vista as my main PC with external 26". It seems to run everything just fine, can even do some light gaming on it (Leage of Legends).

So should I get a C2D, C2Quad, i3, i5? Or just whatever is cheapest that comes with a monitor?
 
core 2 duo / i3 should suffice fine for her, 4G of ram will be good, but 8G would be better for how cheap ram is and if she plans to have that many things open at once.

as well a decent monitor,. 20' or so so she isn't spending all day moving things around to get work done.
 
keep an eye on dell, they may have some good sales, also check not only home and home business, but venture over to the small business side of their site as well.
