Quick question about virtual headset surround

This will be an easy one for someone who knows, when you have a headset with a USB sound card that can do virtual 5.1/7.1 built in and you are in a game that asks you to select a audio mode do you select stereo or 5.1/7.1?

My instinct says stereo and then the sound card starts doing all the virtual affects to give the illusion, but I have been wrong before, Incase it is important which headset I am using specifically Plantronics Gamecom 780's using dolby pro logic 11x
 
Hmm, with Creative cards you used to have to go and set Windows & games to 5.1, then the card's control panel to headphones... Not sure about USB headaets tho.
