1. Are there any drawbacks to using a modular as opposed to a non-modular PSU?
2. Modular PSU means you only need to hook up the cables you need, correct?
3. What Modular PSUs are good?
 
1. Depends on who you ask, but in personal experience.....none.
2. Generally, yes. Some units have all cables modular; others have just the molex/etc. cables as modular, but ATX/8-pin/PCI-E cables permamently connected.
3. I personally swear by Corsair's HX series. Rock-solid stable and reliable.

There are quite a few modular PSUs available, but the reason they are not as numerous as non-modular is because they are more difficult and expensive to produce. That is also one of the reasons why they tend to cost more.

They cost more to make. Look at the cost of the 520HX VS the 750TX. They both cost around the same but the 750TX offers significantly more power. To even get about the same wattage, amperage and quality similar to the 750TX in a modular PSU, you'd have to spend another $50 to $60 for that Antec Trupower New

In addition, not everyone believes that the modular cables is useful. Also, many people believe that FUD BS spread by PC P&C that one loses power with modular cable.

Well, that's not exactly accurate. The Truepower New is a much better-performing PSU than the TX750, and you can find cheaper 750W modular PSUs with performance comparable to the TX750, like this: http://www.newegg.com/Product/Product.aspx?Item=N82E16817153038 Still a pretty big premium though.

A few years ago I remember the PC P&P craze. It was pretty much the mark of a solid system. People were paying these rediculous prices for PSUs that were blatent overkill. I remember a few [H]ardcore folks who were using a 1000w PC P&C unit for a 7800GTX system... Sorry, had to vent. Used to get flamed around here for speaking my mind about that company.

A few years ago, PCP&C and Enermax were just about the only widely-available consumer brands that offered real high-quality PSUs. Things have changed a lot recently.
