Looks like a very very high-end beast of a system. Some thoughts:

- I highly doubt that you'll see enough of a performance improvement from the Core i7 930 to the COre i7 970 to justify the extra £300.

- You might be better off with going with GTX 470 1GB SLI off the bat since that'll outperform the GTX 480, uses less power and heat than the GTX 480, and is cheaper than the GTX 480.

Given that I'm doing some high performance computing and maybe some video encoding, the extra cores (4 vs 6) I think that I may well get quite a lot of improvement with the 970 over the 930.

As for the 470's, I agree!

With video encoding I would agree the extra cores are helpful as long as you are comfortable paying the hefty price premium
 
I would recommend not doing a GTX 480 or 470 SLI setup. Both cards use a tremendous amount of power and generate a lot of heat (and as such they are also noisy bastards.) If you absolutely need the graphics power, a GTX 470 SLI setup is certainly more cost effective, as there are some very deep discounts on the 470 going on right now (in some cases, you can get two 470s for the price of one 480.)

A much better bet than the 470 would be a GTX 460 SLI setup. Using the considerably more-efficient GF104 revision of the Fermi architecture, you can easily overclock a GTX 460 to perform on par with a 470, while consuming less power and generating considerably less heat and noise. Furthermore, while there are a few limited-time deals on the GTX 470s, 1GB 460s are always in the $200-$230 price point. Two GTX 460s scale incredibly well and when overclocked, can match or outperform a GTX 470 SLI setup for less power, noise, heat, and cost.
