I love the desk. What kind of wood is that? I got a butcher block top for our kitchen island from IKEA, and it is made of beech wood, not maple. With maple, you're probably fine, but if it's beach wood, seal it up quick with your stain, or even just a clear coat, or it will crack at the joints with any kind of change in humidity. Mine did, even after soaked in oil.
Ninja edit: I have two layers - one sealed with a clear coat and the other just with oil. The sealed one is fine, but the other split.
What did you coat the surface of the table with?

yeah if you dont want to stain it......get some poly on it asap. a light sand with 220 or 120 first is a good idea, and if you need to sand between poly coats(do 2-4) use 320 grit
(spent last summer finishing OAK cabinets)
It's minwax polycrylic clear satin. I wanted a strong finish that would look somewhat similar to the naked wood.

Here's my setup from a couple months ago. It's a bit different today. Replaced the $40 dollar speakers with the Audioengine A2's. Fixed up the right side of the table (sanded). I haven't taken any steps to stain/coat the butcher block 'countertop' but I'm open to ideas.

osx works fine for me as far as graphic design and basic web work. I spend most of my time up here with 7 though.
