Ok so I'm curious what size radiator(s) I'll need to watercool:

Option 1:
Just a GTX 590

Option 2:
i7 2600k
GTX 590

I don't have a lot of room in my case but I was wondering if a single 120mm radiator would be enough for a single GTX 590? What about if I through in a i7 2600k?

No, a single 120mm radiator is not nearly enough for a GTX 590. You'd want something along the lines of an RX360 rad for everything.

You can fit 3x 120mm rads if you sacrafice the two HDD cages (experience, and also a XS member, scook9). scook9 had one i7 920 OC'd plus two HD5870 cards in CF, all watercooled. I only had one external 120x2 rad cooling a single HD5770 on this case.

There is another great example of a P180 mini over on XS search for user the nemisis. His P180 mini is very nice.
