Overclock! Processor Or Video Card?

The video card
unless u’r processor is slower than the recommended for real gaming then both

For gaming you would gain the most by overclocking your graphicscard, you can use Rivatuner og even ATItool for this (600 core / 900 mem should be easily achievable on your GTS, even with stock cooling). While I cannot give you precise measures in terms of frames increases I can tell you from experience that OC'int the GTS to this level will give you approx 1000 3dMarks (06) extra over stock speeds which is something like 10-12% more IIRC...

But consider overclocking your processor also, they are independant subsystems so as long as you have plenty of power and suitable cooling on the CPU then overclockning both subsystems will, all other things being equal, give you the most.

On a gaming machine which would be more beneficial to overclock? Processor or Video card?

Yes.

(meaning do both, more beneficial depends on where and if a bottleneck was occurring, which can also depend on exactly what game is being played)

For instance:
a 8800GTX on a stock E6400, OC the CPU would probably be best.
a 8600series on a Q6700, OC the video card would probably be best.

But having a little difficulty as to why one would not at least try to OC both. /shrug.
