1) What will you be doing with this PC? Gaming? Photoshop? Web browsing? etc
Pretty much all gaming.
2) What's your budget? Are tax and shipping included?
Trying to stay under 1500. This is including tax, shipping, everything.

4) What exact parts do you need for that budget? CPU, RAM, case, etc. The word "Everything" is not a valid answer. Please list out all the parts you'll need.

Something fairly easy to overclock. I may go SLI/Crossfire in a few months to accommodate newer games.

I think I'm pretty much set on the case. I think I'm in love with it. <_<

I'm not sure on the video card. It's more than I really want to spend, but I have a high-resolution monitor and I've read that the video memory is important. Someone feel free to correct me if I'm wrong.

Any suggestions or advice is welcome.
 
VRAM is important especially at your high resolution. However there's a point where price to performance matters overules whatever VRAM you have.

In this case, for not much more than that GTX 580, you can go with either HD 6950 2GB or HD 6970 2GB Crossfire. Either of those will be a faster option than the GTX 580.

If you do go the Crossfire, up the PSU as well:
$110 - Corsair 750TX V2 750W PSU
$135 - Corsair 850TX V2 850W PSU
 
Since you are building a pretty high-end build, you might want to just pay the extra $3-5 and get DDR3-1600 RAM. It won't make much performance difference, but the cost is negligible and it might hold resell value better.

Have you checked the benchmarks on the 3GB cards? You can save $120 by just going with the regular 580, and I don't think there is that much performance difference even at 2560x1600
