Looking to replace my current rig on ~$1000

Well, I've had my current machine together and running for about 3 years now and I think it's time to upgrade.

For a point of reference, I currently have a Q6600@3.2, evga nvidia 680i mobo, 2x2gb ddr2, ati radeon 5850, antec 900 case, corsair 650tx psu, and uh... 2x wd 640gb AAKS, 2x wd 1tb FALS, 2x wd 2tb EARS.

My biggest issues right now... Well, aside from that I have 6 internal hard drives, an 11" graphics card, and a non-modular power supply within an antec 900 (meaning I have little-no cable management options currently, it's just a big cluster of crap and I hate it). Really that's my biggest issue actually. Other than that, I just want something a bit more powerful as it's been 3 years.

Uses: Gaming, some (light) video editing, entertainment (1920x1080 video playback), general use.

A quick note: I will not be buying anything for at least 2 months. In that time, I expect some things may change, but this will at least help me to get a good idea.

I have put some things together myself, and think it looks pretty decent for now, but I bet there's room for improvement.

CPU: Intel Core i7-2600k - I don't think I'll be changing my mind on this one, been eying it for months.
MoBo: ASRock P67 EXTREME4 (B3) LGA 1155 Intel P67 SATA 6Gb/s USB 3.0 ATX Intel Motherboard - Basically a placeholder for now. I do not care about USB 3.0 or SLI/XFire right now.
Ram: CORSAIR Vengeance 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600
PSU: CORSAIR HX Series CMPSU-750HX 750W
Boot Drive: Crucial RealSSD C300 CTFDDAC064MAG-1G1 2.5" 64GB SATA III MLC Internal Solid State Drive - Unsure on this. I really like the idea for a SSD, but not sold on it yet.
Graphics card: I will be, at least for another year or so, reusing my Radeon 5850.
Second drive: I'll take something out of my current machine.
Case: COOLER MASTER HAF 922 - I spent a fair amount of time looking around earlier. I like the general size of the Antec 900 but wish for a couple changes that this one appears to deliver on. 1. more it has more room behind the motherboard (between the back plate and the wall) for cable management. 2. It's a bit longer, which is more accomodating for larger/longer graphics cards.
Additional Items: Possibly an additional 200mm fan to install on the side. CD/DVD (sata) drive.
Currently Missing and will likely get sometime later: A sound card. A better CPU HSF.

No, before it is asked, I will not be saturating this build with hard drives like my current machine.

Yeah in the next two months that build will definitely be different. So I'm not sure how doing this early research is gonna help you at all since it's gonna be completely different two months from now.

With that said a few issues right off the bat:
- I see ZERO reason for you to get the 2600K as it's main advantages over the 2500K only become apparent if you do extensive video editing/rendering, 3D editing/rendering, or audio editing/rendering.
- DDR3 1600 RAM offers little to no real world performance over DDR3 1333 RAM. As such, you're paying extra cash for nothing.
- If you're in the U.S and planning on buying a P67 mobo after June 30th, avoid ANY AsRock mobo above $70 as Asrock only offers a one year warranty on their mobos. Stick to MSI or Asus.
