I use a 1TB SSD for everything and an old 128GB SSD for data backup. I stream all my media now so no need for lots of storage.

Also depends on where you have your windows swap file and hibernation file.128GB system disk is more than enough. But if you are going to play games, I would recommend at least 512 SATA SDD.
I have Office and several Adobe programs and financial management installed, plus the usual gaggle of utilities. I am not a gamer. My C partition on an SSD is 180 GB, with about 60 GB free.I recently raised my minimum disk size for Window 10 to 100GB. But that's really tight. After Office. Windows 10 needs at least 20G of free disk space now for updates.
This is a far cry from what was required for Windows 10 when it was released.
If you want a cooler NVME drive put a heatsink on it.Would NVMe drives stay cooler if C has Windows and Steam but the games are installed on the other drive like G or H? Or B.
