To answer your PM:

The i7 860 is a good choice. No problem with sticking with GTX 285. At your res, a HD 5970 would be a good choice if you really need the max amount of settings.

Mobo wise, I've heard that this mobo is a decent overclocker:
$135 - Gigabyte GA-P55A-UD3 Intel P55 ATX Motherboard

to make a long story short. I am unable to purchase a cpu from Microcenter. I will now need to order online. Just wondering if anyone has seen a deal on maybe a combo package.

I pulled the trigger today. Here is my order to Newegg.

I plan on reusing my hard drives, current PSU and video card(see sig for parts). In a month or 2 I plan on purchasing a 5970. Maybe I should wait for new Nvidia cards? Also, will my current PSU be powerful enough for 5970?

Again, Thanks for everyone's help. I will take pictures after the build is complete.
