My typical 2 year pc replacement cycle is just in time for the Corei7 launch. Build advice would be appreciated!

I recommend this HSF, the same HSF used in Kyle's testing of the i920:
Thermalright Ultra-120 Extreme HSF - $50 & Scythe S-Flex SFF21E 120MM Case Fan - $11

But gotta wait for the Thermaltake LGA1366 bracket to come out first. Should be released around the time when the Core i7s are launched.

PSU wise, do you really want a modular PSU or is that flexible?

Looks good. I wonder if Xigmatek will have a bracket for the HDT-S1283. If so, thats another option.

If you don't mind non-modular, the Corsair 750W is nicely priced.
