I am leaning towards, a 990X with a EVGA Classified3.

Is the 2600K with a ROG Maximus IV Extreme MoBo better?

I do plan to OC, hence why I chose SCed 580's.

The case is a 800D, There is two EVGA SC 580's. If any other information is required please say so.

I am stuck on the MoBo and CPU. Rest is finalised and about to be processed, I am also either choosing 12Gb Dominator GT RAM or Corsair Vengeance 16Gb for the required board.

My budget has raised as due to more saving's as I was unable to buy my part's due to personal circumstances.
 
If gaming is the priority, choose the i7-2600K/P67 platform. If, however, you're more into graphics or video editing, then go with the i7-990X/X58 platform.

How far were you planning on overclocking the processor? Are you going to overclock the video cards as well?

huh? I heard the second gen intel were much better at video editing.

I highly recommend that you post a full list of parts that you're planning on buying as it seems to me that you're about to waste a lot of money (i.e the choice of GTX 580 and Dominator RAM are a huge concern). In fact, considering that you ignored my earlier advice about NOT going with GTX 580 in your other thread, if you don't want to waste money and if you want to go about this the right way, post that final list.

Don't ever bother with Dominator RAM series unless it costs exactly the same as Corsair's Vengence RAM series. Dominator RAM are rarely worth the money.

On a clock for clock basis, yes the Sandy Bridge CPUs are faster than the old Nehalem and Westmere CPUs in a majority of applications out there. However the extra two cores that the Core i7 990X has over the 2600K do help the Core i7 990X beat the 2600K in video editing applications. Not to mention that the extra 8GB of RAM that a X58 platform has over a P67 platform does help out a bit in video editing/rendering. So if money is not a concern and every ounce of video editing performance is needed (regardless of how minute it may be sometimes), then the 990X route would be a choice.

For gaming, however, as Tiraides said: The 2600K + P67 platform is the better choice.
