CPU & GPU Temperatures

I'm thinking of making my first experiences with CPU overclocking.

When reading about this subject, with the help of google, I found that temperature monitoring is an important part of it.
Then I searched the forum for threads about CPU temperature monitor programs, and I found this: http://hardforum.com/showthread.php?...ure+monitoring

In this old thread they talked about that different monitoring programs were showing different temperatures !?

All programs should display the same values in my opinion.
Maybe a difference between 2 to 3° would be acceptable, but not between 10 and 20°.
How do the programs convert the data from the sensors, not only for the temperatures but also for the RPMs from the different fans ?
And why can it come to so big differences ?
BIOS has its own monitoring but is it more reliable ?

I'm using Everest 4.60 and here are the results:

Motherboard: Asus P5E-VM HDMI
CPU: Wolfdale E8400 3GHz
Graphics card: eVGA GeForce 8800 GT
Power supply: Silverstone ST50EF-Plus-SC
PC Case: Silverstone SG01-S Evolution

The computer was running for about 10 hours (for internet only) when I made the test.
But no value should show up below my room temperature (21° C), right ?

Something doesn't add up here.

The CPU temp in Everest is the CPU socket, and the "core" temps are for the CPU it self. But yes, no temp should be under room temp. The 2 you want to look at are the "core" temps #1 and #2. I use Everest, RealTemp and CoreTemp, and all 3 are within 1C of each other, which I find ok seeing as each has a different update rate/time.

Also, mine shows anywhere from 16C to 110C for "CPU" temp, both of which are way off.
