I see a few articles around the net, figured we should start one up here!
I just picked up an i7 and mobo, so I'll post my results as I go. anyone else want to chip in feel free!

I just looked at about 5 different guides then got my scratch paper out and wrote down the important things, limits, and my trial runs.
1. Lowered the QPI multiplier to 18x.
2. Max out CPU multiplier.
3. Raise the Bclock and test.
4. Check for instability and temperature.
5. Repeat 3-4 until unstable.
8. Increase vCore (if safe to).
9. Repeat 3-8 until vCore is too high, or vCore has no effect on stability.
10. If the QPI and/or Uncore are overclocked at this stage, increase the vTT, or try lowering the Uncore multiplier.
11. Repeat 3-10 until the temperature is too hot, or the voltages are becoming excessive.
(oh yea, depending on your ram, you might need to adjust your ram voltage too. and keep it within 0.5v of the uncore voltage)

There are some good guides out there.
Once you understand what everything does it becomes super easy.
