anyone aware of sources out there for backplates for gigabyte gtx 780 ti's?

No, but they certainly won't help dissipate heat - not exactly a top pick when it comes to selecting a material that's thermally conductive.
 
You could have a pure copper one made custom with double sided thermally conductive adhesive to lower temps.
 
actually i wasn't concerned with heat, the top card maxes out @ 83 deg c under full load while the lower cards lags about 10 deg c behind, i was being much more shallow and just interested in the appearance :)
