$300 power supply cables

Custom sleeving on the cables is why. Each individual cable is sleeved and all done by hand.

Still crazy expensive, but these are higher-end and custom made, etc, etc, etc...

Custom niche stuff is always very expensive. Why does price go up exponentially with regards to power supply wattage? For the same exact reason.

Considering it probably takes at least 5 minutes to sleeve one individual cable and put it in the connector, and I count at least 100 cables, that's more than 8 hours of work per set. Labor costs alone is probably around $100. Then add in material cost, overhead management costs, and profit margins in a niche market, and you've got your $300 cost to end user.

It doesn't look very well done TBH...especially as these are the ones they picked for presentation. It looks like there wasn't much care done to get it looking perfect and looks pretty rushed. It's not terrible, but it's just no where near neat or the effect you could get if you did it yourself (or done professionally).

The heatshrink on those cables look imo poorly done at non-matched lengths (or it could be the shot of the picture).

Agreed. I was going to say you're getting your money's worth in heat shrink though (it's about an inch long...).
