Mostly gaming, but needs to be fast enough for Matlab/Simulink and other engineering related applications.. Not as important is Photoshop and video encoding. It should be decent, but doesnt have to be the fastest in that area.

So as I said, it will be mostly used for playing the latest games. So I compiled a few items already and would like your opinion and suggestions for the missing parts.
CPU: Intel Core i5 2500K (or is the 2600k worth 110$ extra for Engineering+light video encoding?)
RAM: 8GB (2x 4096MB) G.Skill Ripjaws DDR3-1333 DIMM CL9-9-9-24
HDD: 2x 1000GB Samsung Spinpoint F3
Mobo: Asus P8Z68-V PRO Z68 S1155
Case: Silverstone FT02 (I heard that it's reasonably silent and overall a great case)
PSU: Corsair AX750 (enough?)
BluRay: Samsung SH-B123L (don't have any specific need, so this should be good enough)
That leaves me with 3 things I can't decide on at all.
GPU: ? (Normally I'm a little Nvidia fanboy, but I will just take what's better)
CPU Cooler: ?
Soundcard: ?
