I have the exact same board and power supply and I don't recall my exact lengths. If memory serves me I went with the same length as what Corsair provides but went shorter on the 24-pin and a little longer on the 8-pin just to make sure not to have a ton of excess.

I can't honestly recall ever hearing my SF600 either. It rarely spins up but that may be due to having extra head room so the components don't require cooling very often.

The biggest reason I went with the 600 over the 450 is because it gives me a little extra head room in the event I build or change something down the road which places stress on the 450. Granted I don't honestly foresee this happening but you never know.
I use the SFX600, no problems at all. The cables are stiff but that is about all. If you want to make cable routing a tad easier sleeve them or get some cablemod cables.
The last stress test which I did was MOBO - 34°C and CPU 51°C however keep in mind my system is in a basement which the ambient is 64°F (17°C). I am also waiting on a 1080 card so the test was done with my previous 780TI I had laying around.
I am running the same board and haven't had issues with temps on either motherboard or CPU. I am running a Noctua NH-C14 on my CPU which has been overclocked currently running with 1.20v.

Yup I agree on the cable management. I think once that gets cleaned up the internal temps may drop a little (1-2°c possibly) not enough to make a huge difference but a little extra helps.
