At idle, Speccy shows temps all over the place, jumping between 50 & 60.

EDIT: Even at idle, the CPU keeps dropping to 3.5 for a second or so.

What cooler are you running? Are you running them at stock speeds?
Stock, the 4770k had a TDP of 84W while the TDP of the 8350 is 125W, meaning the 8350 does get a bit warmer.
I swear by g-skill RAM. I have used it in a lot of builds with no issues. I'm running Mushkin Enhanced Blackline in my main rig and Corsair Vengeance Pro in my Hackintosh.

That isdefinitely an option. I do have an IDE controller card that has to be installed anyway to run the ZIP drive.
Another good idea. Maybe I can somehow adapt the USB drive into the housing of an internal drive.
The reason there is no adapter is because the USB headset has its own DAC. The USB port does not send analog audio information the same way a headphone jack does. Hope this information is helpful.

Like bloodypulp said, in the BIOS, make sure the SATA mode is set to RAID. You will then be presented with the option to configure the RAID when you reboot.
I'm going to guess that this is a media server.
If this were my system, I would get rid of the Supermicro cards and replace them with something that supports hardware RAID.

A B85 and K series CPU don't mix. You'l want a Z87 motherboard to be able to fully utilize all the features of that CPU. That's not to say you can't put a K series CPU in a B85 and expect it to work.
