So your HTPC is also a gaming rig? Do you have another rig or just one that is multifunctional? For most purposes of a HTPC the GTX 260 is overkill. My BE 2400 oc'ed to 2.9GHz and an onboard ati 3200 is fine for all but intense ffshow scripts but obviously I would not game on this.
I would also take in consideration that DDR3 is dropping in price (even if relative to DDR2 which is up in price from a year or two ago). In a few months I suspect that the price difference between DDR2 and 3 will be negligible soon anyway. I plan on selling my DDR2 soon in favor of DDR3...
Right on! To think of it I would love to see this adapter as well as some cheep sata-->P6 adapters so I can put a decent gpu in this dell I have that only has sata connectors left for power.
I have a 260 core 216 and its a nice bump up from my former 8800 gts 640mb which may be similar to your 8800 gs I am not sure. I also use 1680x1050 but I haven't played FSX ;(
If I remember correctly some games aren't CPU limited like call of Duty W@W my e4300@3.2 with a 260 core 216 didn't use 100% cpu. Are FPS over 60 even noticable anyway?
I have taken components out and replaced them like you and some times I have to reseed the RAM even if I didn't think I bumped them. Usually with a quick start and immediate shutoff the RAM usually is the problem for me. Hope you can figure it out.

I know bonic is good at using cuda for their apps and for the price per crunch it seemed like for me that the gpus were a far better deal. Is F@H a different story with cpus performing better? Do you use a special app for F@H to utilize all of those cores?
