Both combos are good if you ahve more money then brains.. If you dont however please answer the sticky so we can make a proper recommendation based on something substantial.
 
1) What will you be doing with this PC? Gaming? Photoshop? Web browsing? etc
2) What's your budget? Are tax and shipping included?
3) Where do you live?
4) What exact parts do you need for that budget? CPU, RAM, case, etc. The word "Everything" is not a valid answer. Please list out all the parts you'll need.
5) If reusing any parts, what parts will you be reusing? Please be especially specific about the power supply. List make and model.
6) Will you be overclocking?
7) What size monitor do you have and/or plan to have?
8) When do you plan on building/buying the PC?
9) What features do you need in a motherboard? RAID? Firewire? Crossfire or SLI support? USB 3.0? SATA 6Gb/s? etc.
10) Do you already have a legit and reusable/transferable OS key/license? If yes, what OS? Is it 32bit or 64bit?

but i'm useing my ati 5850 and a Antec p183 case.

and 3 hdd's 250 500 1000 gb's disk's. all of them are WD.

have some lite on DVD Burner i will re use as well.

like i started out with only new stuff i need is MB / RAM / CPU.

Belive the PSU is more then enought still until i go crossfire or sli or some thing insane :D

Well if you had phrased your answer like that, that would have made a lot more sense more correct than "dont matter have nothing to do with graffic." But that's for future reference though.

Anyway, go for a Core i5 750, Asus P7P55D-E Intel P55 ATX Motherboard, and the cheapest 4GB DDR3 1333 RAM you can find and you'll be set for gaming. No, latency and higher speed RAM do not provide a real world performance increase.

For your needs, there's really no reason to go with the i7 at all:
The i5 750 is just as fast as the Core i7 950 in gaming as shown here:

The 2.8Ghz Core i7 930 only provides about a 2 to 5FPS difference over the Core i5 750 as shown in this review:

Additional proof: The $1040 3.3Ghz Core i7 975 Extreme Edition CPU is only 15% to 30% faster than the Core i5 750 with only a specific set of games and video cards:

So considering the the i7 975 is faster than the i7 930 and i7 950 and yet only provides 15% to 30% under the most ideal conditions, the Core i7 930/950 is definitely not gonna be that much faster than the i5 750 or i5 760. At least fast enough to justify the higher costs anyway. In addition, there's very little real world difference between triple channel and dual channel RAM in real world apps and games.

So platform wise, you can save around $150 to $200 if you switch to the Core i7 750/760 route and still get very similar performance in games. Dunno about you but $150 to $250 is too high for minimal gains in gaming. It'll only extend the life of your PC by 2 months at most.

P55 is the better chipset for the Core i5 750 CPUs.

Again, unless you're planning on overclocking to 4GHz, no reason whatsoever to get DDR3 1600 RAM unless it's the same or not that much more in price than DDR3 1333 RAM.

Why go intel over amd?? the amd cpu is only 1800 dkk compired to the i7 that is 1988 dkk.

and i can get the AMD 1055T for 1337 dkk ( LOL nice numbers ) is that better then?

what is best then go with the i5 760 OR get the duel core i5 680 ???
 
Well, Intel has the better price to performance ratio in the high-end performance market in applications other than gaming. Like video encoding, editing, photoshop, etc. The i5 760 is a tad faster than the1055T when it comes to gaming performance. Honestly, you can flip a coin between the two CPUs and you'll be set either way.

Don't bother with the i5 6xx series CPUs, They're stupidly overpriced for what they offer. Unless those i5 6xxx series CPUs were half the price of the Core i5 CPus, stick with the Core i5 750 CPUs.

It's faster in just about everything, but I heard the 6-core feels more 'smooth' doing day to day tasks.

P55 chipset. The motherboard I recommended to you earlier fits all your needs.

For AMD, just go with a 890GX chipset motherboard. I recommend this mobo:

The regular version without those suffixes. So exactly " P7P55D-E". Nothing else.

hmm.. i dont really wanna waste my money the thing i like about it was the network thing... that it have a good controller for it so i can use my 1 gigabit home network and from what i can read the others dont? or i'm rong?

No that motherboard, like most other consumer motherboards, has a lan controller made by Realtek. So basically, it's gonna be the same controller you see in motherboard half that price. So again, not worth the price. If you really want improved LAN performance, you get a gigabit switch and then Intel NICs for all of the PCs that'll be doing heavy LAN transfers. Something like this Intel NIC will absolutely beat ANY Realtek LAN controller:
$30 - Intel EXPI9301CTBLK 10/100/1000Mbps PRO/1000 GT PCI-E x1 NIC OEM w/ 1 x RJ45

There is no EVO version. EVO just refers to an overclocking feature on every one of Asus's P55 motherboards. For Crossfire, all you need is this version as I've mentioned multiple times:

Yes it is possible with good maintenance, good power, and good cooling.

Yes that mobo will do Crossfire just fine.

IMHO the Hydro series CPU coolers are worth the price only if you're using a relatively cramped case with mediocre airflow. Your current Antec P183, on the other hand, is a roomier case with good airflow. Hence, the Cooler Master HSF Danny linked to is a far better value for your planned build.
 
the p183 is a awasome tower but when u have a 5850 card in there its really hurting the flow alot why i looked at them.

but hey what do i know ;D i'm not the best at pulling the cables the best way around
