Some games have used audio pre-mixed for 5.1. Doom 3, for instance.This! Youtube does not have 5.1.. only some dvds/bluray/etc have it and 5.1 specific music..
You can use whatever format you want.. those two aren't your only choices.To get 5.1 discrete audio channels you would need to encode the audio with Dolby Digital or DTS.
Maybe the big ones, but definitely not all.Currently, flash video sites all use either 2 channel MP3 or AAC.
