Would I be able to just get the DFI SLi-DR, flash the BIOS to the latest version, set the BIOS automatically (defaults), and be on my way? I don't plan on overclocking...
 
Yes...every motherboard can run off the default settings and boot up...the DFI just has the options to tweak alot of settings if you do overclock
