Do they even exist anymore?

realistically I just need something to handle DHCP, ideally just a single WAN and a single LAN to connect to my 8 port gigbit switch

anyone point me in the right direction?
 
You could get an edgerouter or pfsense box off eBay. I dont know of any consumer grade LAN only routers.
 
If this is for a residential install, then I typically just get whatever wireless router off of the shelf and disable the radios if they are not needed.
 
Just buy a regular wireless router and disable wireless transmission in the settings.
