Windows 7 File Association Help

Does anyone know why this happens?

I built a new pc about a month and a half ago and its been great except none of my file associations are being saved.

I have 2 hard drives and 4 mapped drives from my Windows 2008 server. The OS drive is a SSD with only 64GB of space so I installed all my programs (Microsoft word, Winamp, WMP classic, etc) onto my 1TB drive.

Every time I want to open a file from a folder, I have to chose the program to open with. I have tried setting up file associations in control panel, through right-clicking and marking the "always open in this program" and it just doesn't save. Ever.

Is it just because I've installed my programs on a separate drive?
 
Are you running the default programs control panel with admin privileges?

I haven't tried right clicking any of the programs and saying run as admin, but I'm the only profile on this pc. I'll try it though to make sure.
 
If you have UAC on, running an app with admin privs & setting file associations can get around this.
