Why does my refresh rate reset itself between games and OS?

I am having a problem keeping the refresh rate to stay at 85hertz, it keeps switching to 60 when I enter a game. I have a Sony FW900, and I would like to use the 100hertz refresh but it goes into 4x3 when I am @ 1600x1024
