I'm getting an itch to completely screw the network, so I'm considering turning my "old" computer into a virtual server and running everything there. I also want to experiment with ESXi since my experience with it is extremely limited.

I'd have my Minecraft server (3-5 users max at one time), maybe PFSense, back ups for two computers, a media server, and the mumble server.

MC and Mutter would probably be in Mint, PFSense does its own thing, I'm considering FreeNAS for the media server. Not sure how I'm going to do backups.

I'm fairly sure I'd be fine with RAM (8 gig), but increasing that wouldn't be an issue. Same with HD space. I'd have 3 TB in RAID 1. I'd probably look into getting a couple PCI-E nics for MC, Mumble, and PFSense.

My big question is whether or not the i3 would be able to handle that kind of load.
 
That's probably adequate in terms of CPU/RAM. You might hit a wall in terms of CPU past 1 or 2 on the fly transcoded streams, but that's certainly enough hardware to start out with.
 
Mostly ggreed with fantabulous. Nothing you posted, other than transcoding, will be particularly CPU heavy. I think you will want that upgrade to 16 GB memory though, because the hypervisor itself does take a bit of memory overhead.
