Which would be a better way to do this wiring?

Not experiencing any issues with drop outs. I have not tested throughput, nor am I skilled enough to. I have to get more ethernet ports, so I must get new equipment.

Currently.

Modem to Main router - Airport Extreme (current model)
1. Wired out to another Airport Extreme (older) in extension mode (is that a bridge?) far away
2. Wired to yet another Airport Express (current) in same configuration, even farther away.
3. Out to a Cisco SG200 8 port switch (the main router and this Cisco are 2 inches apart).

I need to upgrade the Cisco switch as I have run out of ports.

Should I keep the system as is and just replace the Cisco switch or is it better to go

Modem - Airport Extreme - Switch and have everything come off the switch? It would be another Cisco switch.
